If you're planning to move to a new server you will need to first backup your databases:

/usr/local/openvpn_as/etc/db
/usr/local/openvpn_as/etc/as.conf
To uninstall Access Server:
To remove openvpn-as from your server (assuming you are using centos or a RedHat distro):
rpm -e openvpn-as
To remove openvpn-as from a Debian based distro you will want to use this command:
dpkg -r openvpn-as
